In this demonstration, learners observe how liquid nitrogen both boils and freezes ingredients to make ice cream in two minutes. The liquid nitrogen also causes the fat and water particles to stay very small, giving the ice cream a creamy consistency. Use this activity to demonstrate two phase changes in one bowl!
